Fully matured???

I plants are nearly finished. My question is when. Many pistals are turning amber (like 50%+) But towards the top of branches all the pistals are totally white and still growing more. But midway down they are darkening quickly. And some of the small branches are almost all amber. And yet, small little bud sets on main branches have totally white pistals. Not sure when to pull them. Will the tops eventually stop growing and turn amber too? Is it possible to wait too long and ruin the bud? Thanks for answers. 10.5 wks into flowering. Unknown species.
