Just water right around the seedling. Don't get the whole pot wet...or it'll never dry. And because it's coco, include low dose nutes. I use 1/8 strength for that size seedling.

Those lttle fat leaves that have yellowed are cotyledons. They are destined to be used up and die. So you need to provide the nutrition for the plants now. If that seedling mix has nutrient value...then feed less. But if you're using a soilless...then I'd feed at maybe 1/8 strength...
If you're locked into a schedule by your system...then by all means, do not throw a monkey wrench into the works. I grow in coco and can start and finish plants as I desire.
I can't answer your first question but I would guestimate that your current method would outperform manifold training...

This is my first attempt at mainlining. I liked the sound of it since most training is done early on. I have almost completed mainlined plants vegging and will evaluate but I think they'll need at least a month and maybe more in the veg room.
Far as defoliating...I did it occasionally...
I lived in the mountains in southern New Mexico. Just south of Gila National Forest in Silver Ciity. Pretty dry there except during the very brief monsoon in early summer.
But I missed the ocean...so now at sea level. Good luck with your grow. I'm day 2 of 12/12...a fairly unexciting time...
Well good for you...hope it helps getting the room dialed in. I'm lucky to live where humidity is fairly high and so far...no correction to RH needed.

I assume that the small numbers represent leaf temp using some sort of infra-red sensor or some such thing.
I only refer to the numbers on the vertical and horizontal axis. And those are room temp vertically compared to acceptable humidity for that temp. Keep it in the green.

I'm posting a vpd graph. I've seen a half dozen around...the idea is that if you keep the temp/RH within the "zone" then plant transpiration can occur most effectively.
