That is some really great growth for Day 5. I don't know about full colonization in a week though. I guess it's always good to experiment and figure out what works for you.
Just a tip, if you have a dry verm layer, putting the jars upside down allows condensation on the inside of the jar to dribble down and wet the verm layer, making it defeat the purpose of it being a contamination filter.
Are they inside of an incubator?
I've had jars take as long as 2 months before 100% colonization, albeit, I used tall half pint jars, which I have no clue if it makes a difference or not.
