While I dig country ham ok and grew up eating it, this is an art I'd really love to learn to do some day, along with the cheeses:

https://en.m.wikipedia.org/wiki/Prosciutto

I'd love to replace the curing salts blend we use, which contains carcinogenic nitrites and trust more traditional methods, but man you are taking a huge chance with mean sickness if you F it up.

You ever work with salt,, borax and brown sugar. ?

No, but that's the traditional way folks around here cured and the direction I'm heading. We currently use a commercial curing mix to make damn sure we get the cure right.

So I'm new to all of this, growing as well as the forum but I have to say this sounds like a blast! Is it really open to anyone? How would I sign up or keep track of when the next one is? I would be really stoked to soak up some knowledge, share some good times and hopefully meet some other heads from Oregon since I'm new to Portland. So reassuring to see cool people able to get something like this together.

It makes a big difference . My grandfather taught me. We actually smoked the hams with (pecan wood, apple wood and a mixture of hard woods. Not trying to break up what you are doing. You will learn I promise. If the meat is not done right you will know right off when you take it off the wrap or smoke.

sure thing Treeman :) You and me both...no bueno with pain pills. I took them while in the hospital with my shoulder butt umm...took two weeks to get back to 'normal' if you know what I mean ;) and they make me so nauseous I can't stand it. So the hash capsules and edibles were my only pain meds...and my cbd salve :)
watch your inbox :)

Know how you 2 feel. I have had 7 spinal surgery's . Could not take most pain meds. East coast is very unfriendly to anything else. It sucks.

Wut up nuggs.
That bag with the gg4 s1 beans in it, was from a freebie HSO blueberry headband seed i grew out. Was such a killer plant. Wish I could keep taking cuts of it, but I just lost it from the russet battle. Had to throw it out :-(
It was a good strain. RIP BBHB
I'm gonna order a pack of them I'm thinkin.

Oh yeah, my buddy @AlphaPhase has some of those gg4 s1's going rite now(they're still pretty small though), i think he's going to show the grow. Stay tuned
