You need a coagulant of some kind and I've never used anything but rennet to do it in the past so I don't really know honestly. But I know you can make ricotta with acids like lemon juice and vinegar. There's also vegetable rennet if you don't want animal. You can find rennet on amizon tho it's not hard to get.@bu$hleaguer , is there a simple way to make cheese that doesnt involve finding rennet?
