Cook it off, oil it a bit with some evoo, cool it in the fridge. Use it to make something like a tabouli, or make a cold salad - with stuff like roasted peppers, cooked shrimp, halved cherry tomatoes, herbs, some blanched veggies like asparagus or green beans, sliced red onion, roasted corn, feta cheese, chopped cooked bacon, and a good tangy vinaigrette. Any and or all of these things would be good together. Think : kinda like a rice bowl or bound salad. Get a lil stoned and creative with it.

Digging through the pantry I found a bag of quinoa. I've cooked it before but was never impressed. The lady won't eat it. What do I do with it other than feed it to the birds?
My wife use to make stuffed portobello mushrooms with quinoa.

Scrape the innards out, sauté with some onion garlic, whatever veggies. Then mix with cooked quinoa and stuff the mushrooms and top with feta cheese then bake them.

I thought it was pretty decent!

I'd use it in tabbouleh (so dilute with greens you barely notice it) or crisp it up for salad topping. My big reward for driving the Wilshire corridor down here is to get a Mendocino Farms Caesar salad which is topped with crispy quinoa.
