Spacing is very dependent on the shape of your space, heatsinks, how hard you run the COBs and lenses etc. I usually make a mock up and/or use ms paint when designing a system to try and get as even spread as possible.
You are correct the 3.5" X 36" will make long thin lamps, only good for spaces that would fit that shape. I use 4.9" X 14" with 50W installed on each, passive cooled for example
You could even use CPU coolers to cover a 3X3. They are very high performance when it comes to cooling, light, cheap and very adjustable, up to 100W ea is doable. The downside is more wiring/rigging etc

You might squeeze 1 or 2 percent more light by reducing heatsink temps if they are running hot ~110F. But if your temps are reasonably low already 90-100F then there is not much to be gained.
