    Some/most/all? of those appear to be apple trees, I have some nice grafted cultivars trained flat (honeycrisp,jonagold,elstar,gala,golden delicious,and so on). You can even buy them that way, although wheres the fun in that.

    males plants cannot make females TURN male? They provide the pollen for seed creation, which as you know is always a turn off when you're only trying to produce seedless bud.

    some netting will help, its better to adjust them before they stiffen up during flower. Do you have a specific height requirement? If so you can tie some of the branches horizontal to try and keep a particular height. I usually do this with an entire screen.

    im kidding, however what you could do is run a fert higher in N which is the first of the 3 numbers listed on the packages. for example you listed 15-30-15 n-p-k. This product should work fine, when you see flowers around the corner raise the P and K while easing up on the N

    Pick up the soil with a spoon and taste for nitrogen, it should be a little fishy tasting.
