40 gallon res is way too big for the iceprobe.. you will need a much larger chiller.. Every case will be different depending on Ventilation / Reservoir size / Ambient room temps / reservoir insulation / type of hydroponics.. And i would avoid getting ANYTHING frozen near the roots :)

Even if you're using a climate controlled room, the root system should still be cooler than the room (As this is how it would be in nature anyway). 68 is the target temp for hydro water :)
