In theory I think this is sound.
First of all this needs to be done with a concentrate. Leafy matter rolling around in the milk will require filtering, and it's just going to be easier this way.
So take some hash, preferably unpressed (or just kief), or even hash oil and add it to the milk during steaming. The heat during steaming is going to take the milk to about 150 to 160 degrees, which will activate the cannabinoids but without destroying them. You can then use this steamed milk complete with concentrate to create a number of drinks. A latte is probably the best choice as it is primarily milk. A cappuccino is a good choice if the dosage is strong enough. Mocha will cover the flavor if someone finds it unpleasant, as would a number of syrups like mint, hazelnut, irish cream, or toffee. Cinnamon and orange actually increases the flavor, so there's that too, as a Cannamon Machiato might be among the best combination of flavor known to man. Cinnamon, Chocolate, Orange, Coffee, Cannabis.
I think my choice would be 1 shot of white chocolate, 1/2 a cup of Chai Tea, 1/2 a cup of Canna-infused whole milk. I used to work in a very legit coffee shop and espresso just makes me eggy. Chai is the bomb, especially good with that weedy flavor you get from hash and concentrates.
I'm also now thinking about warm weed Sake. The alcohol should be able to bind up the THC just like lipids do.
