Egg yolk for Lecithin in gummies

I saw xtsho used mustard powder in place of Lecithin when making gummies and I know egg yolk can be an emulsifier as well but not sure about using it in gummies. Anyone tried it? Any chefs have thoughts?

I used french's prepared mustard in a batch last week. yes, the bright yellow squeeze bottle.
1/8tsp to 1/2 cup oil.
not a spec of oil separated.
also used a stick blender to mix it all so that helped with the emulsification.

That was my fear. I ended up finding mustard powder at the house and went with that. I haven't tried one yet but they look edible lol
