Help. Newer than a rookie here. Cooking off alcohol

So I've got my tincture In a sauce pot boiling off the ever clear. I'm making gummies. How do I know when the alcohol has all burned out? Also does it help or hurt or anything effect if I don't let it all evaporate?

If you are boiling off set at 93C/200F on a PID control, the boiling will grind to a halt.

If you are measuring actual boiling temperature, it will rise from about 78C/173F, to 100C/212F or higher.
