I was thinking that it would be ready sooner since the leaves are turning yellow. If there are 5 weeks left, does that mean I have a N deficiency?

I would feed one more time with your normal N amount. Then run a solution ratio of 1 part N to 3 parts P for the remainder.
I wouldn't consider that to much of a N deficiency.

Based on the colors of the stigmas I'm shocked that they aren't sticking straight out. Maybe a month to go.
