I think that those are the max temps that the chip will survive. Seems that you have plenty of wiggle room @50degC. Most manufacturers will give you specs on how they collect measurements so try a little surfing.I have the same question for my CXM-22 COBs. According to the spec sheet, operating case temp is 105C, junction temp is 140C . I don't know what either of those means, but my heatsinks are steady at 50C.
