Yea we had rotisserie chicken last night so I'm using the carcass for the stock and the left over meat for the soup.

I love adding a Parmesan rind mmmmmmmm mmmmmmmmm and roasted garlic.I made some Turkey stock the other day and since I had made some Nam Prik Paow earlier I just made some Tom Yum Kai out of it LOL. We are all on a soup binge! Love it

Imho, that's the way to eat a rotisserie chicken; once the legs, thighs and breast meat has been snagged, into the soup pot it goes!
