Having trouble determining harvest time. Started pre flower stage Jan 30. Puts me at 7 weeks. Could use dinner expertise please.

You just have to watch the plant. If you have a breeder time frame their flowering weeks start once the plant shows it's starting to stretch and enter flower. Usually 3 day's to 10 days after 12 12. These are just estimates

It’s looking to be in the harvest window… I am seeing some amber and cloudy trichs on sugar leaves. Possible that your buds are all cloudy/milky. Do you have a magnifier on your phone? Take a clear pic, then go into pic and zoom, but keep clear image. Check under the buds on the calyx’s for true trichome development. But, all that said… you are close if not there.
