Question about leaf/plant process and pruning accordingly

Hello! I was wondering upon something I had heard along the lines, to the tune of this... I heard the leaves that are produces store nitrogen in the vegetative phase, and in flowering transfers the nitrogen to the plant, as the nitrogen it needs has to come from the plant itself in flowering. Is this any semblance of true?

And according with that scenario, would it then be bad to take all of the leaves from veg off before flowering is done?

For example... I am growing out two plants that I did not veg. They were way too big for my friends space, so i took them. All of the foliager looked like shit, and within two weeks of flowering the old growth looked like shit. Now all the old foliage, in contrast to the new growth, is looking bad. But the new growth is fine. How much of an impact to the plant is "lollipopping" the branches, is basically the question I am aiming for.

It just seems a little strange to me that some people say that you could remove foliage all you wanted going into flower, but what good was any of that veg growth then, besides to mature the plant's size?

we only remove growth that would suffer and wilt from a lack of light or would cause a lack of proper airflow i.e. the bottom 1/4 of the plant. otherwise you're chopping off growth the plant has worked hard to grow and store energy in.
