If you use regular starter mix it will have a small amount of nutrients in it that will keep them healthy until they go into larger pots. I use soilless Promix HP to start mine and water it when I put the seeds in with a low dose of either seaweed fertilizer or even better some VeloKelp made by REMO.

With soilless you do need to feed something right away tho some dumbasses will say that a sprout doesn't need anything for 2 weeks. Like you wouldn't feed a new born child anything for the first two weeks. lol

Yes, you can use regular seed starter mix to start seeds that's what I use. And like OldMedUser said, you don't need to fertilize seed starter mix right away, I would wait maybe a week or more based on how the sprouts look.
Also, no need to sprout them first before putting them into pots. IMO the whole soaking until the seeds crack and then planting into the soil is unnecessary and more often than not only introduces the potential to damage roots. Most breeders these days recommend germinating directly into your seed starter medium.
