Stabilizing soil ph

So I picked up a bag of pro mix and I tested the ph in different location of the bag. It's all at 6.8.... So that's perfect! Now the question is.... How do I keep it stable at that or right near that? (the pro mix is for my third grow, germination starts tomorrow)

My first couple grows I used MG organics choice and by the time i got to flower the ph of the soil was below 5. That is with adjusting my water to 6.8 every time.

I'm 5 Weeks into flower as of now and I'm adjusting my ph of the water so my run off is as close to 6.6 as possible. That means my feeding water is anywhere from 8-10... So far the plants have had a positive reaction to the adjusted feeding water. Is this te propper way to feed and adjust ph levels to stabilize the medium!?

Cheers
