Nothing, unless the plant is dying, harvest as late as possible.

You might want to have something to make a sort of cold frame with, just in case the temp makes it down those last few degrees to freezing. But, I started a whole outdoor crop in early April this year, we had freezes going on through May, and they did fine. It DID slow their growth (as seedlings).
