Trimming fan leaves

Can you? Yeah. I'm not sure it's really necessary outside though. I feel like the sun will penetrate the canopy as much as needed.

Really doesn't look like you need to, the plant is "open" enough to allow light into the more inner parts of the plant. You could take a few, but remember those fan leaves are what's powering a plant that's going into flower, needs all the energy it can get. Nice looking plants BTW!
