What benefit does the time spent in paper bags give the buds? If they are already adequately dried, what is the disadvantage of going straight into curing jars?
What is the purpose of putting dried buds in paper bags before curing?

Paper bags can slow down the drying process. If you hang your buds and notice they are drying too fast (BAD!!!), you can bag them up for a day or so to slow things down.

But, if they dried out too fast while hanging, why wouldn't you want to put them in an airtight container ASAP?

I'm going to try this with a friends grow im helping with. In years past I cut whole branches, trimmed, and hung in a closed closet. Within three or so days they were too crispy to cure well. We cut and hung Saturday, outside just starting to crisp up. So tonight we will bag them and hope for a slower, more uniform dry.
When they dried too fast, they also didn't compact up and were light and airy, cure or not. (They were pretty compact at harvest and not like the little popcorn buds) I assume that's what drying too fast does
For those with experience doing this, I assume the grocery bags should be kept closed? We are planning to open the bags and redistribute the buds at last once a day.

They even out the moisture. The buds touching the paper dry and the buds in the middle touching the buds on the sides transfer their moisture. It lets you keep drying under more even control, especially helpful if you have little buds and big buds that may dry a day or so apart.
My personal preference is to hang for 3 days or until most of the big stems start to snap then I put them in bags for another 3 days or so until they are nice and smokable then it's off the stems and into the jars. If some seem a bit moist the next day then lay em out for a bit and rejar and check the next day again.
