Would LST be my best option to grow a "smaller" plant outdoors?

Ok so here is the deal. I live, for the most part, away from the masses. I live up on a mountain and am wanting to take advantage of the dry season starting here in Costa Rica, the sun is going to be out for what seems a minimum of 8 hours a day for quite a few months. I do have a neighbor that lives lower than I do and a guy who occasionally works in his field with his coffee plants so I feel like I could get away with an outdoor grow if it wasn't a 6-8 foot tall monster.

I have never done LST but I've read a little on it where it still yields great at a somewhat convienent height. If LST is my best option, how big of a plant am I talking here? Any other suggestions? Thanks!

That depends on how much you work the plant. By working I mean how much you tie it down.

I myself am an extreme LST type. I start the process in the first days of veg and continue on untill they are at least 1/2 through flower.
Here are some pics, starting from the begining all the way up till week 7 of an 8 week flower.
What could have been a 5 or 6 foot plant is mesured 16 inch's from the top of the soil to the tip of the tallest top.
Yet it would appear the plant is going to produce about 4 oz's per plant.

Now in this last pic if you look to the left side of the tent, you will see many many tops, and all on just 6 plants.
All of those 6 have been LSTed.
