So I have a plot out front that gets about 1 hr daily. Just wondering what the downsides to growing outside are.

Please,

Go on the shroomery.org and make an account and talk about what you're saying and get up to date.

Grow shrooms in the dark and see what happens. I bet you still get primordia, and plenty of it, with proper air flow and humidity.

I don't want to make myself seem like a bigger ass then I already am.

The shroomery is full of fucking idiots ;-) and there mycologists can suck a fat one, there is nothing wrong w/ cold shocking. I been around long enpugh to kno shrooms will grow in the dark. Turned out a few batches I forgot about that way.

Uncontrollable environment.
I figured that could be an issue but will spores come to fruition? I mean I have some mushrooms that just pop up there and I would think that if mold was going to form out there I would have seen it by now.

In it's niche mycelium is a beast.

I would colonize jars and then do what you want with them. IMO, make a seperate bed, maybe even raise it, and put a lot of grain jars in it and cover it. Mushrooms also prefer shade over open sun so under a tree or in a place where the son doesn't shine directly on it is preferred. Look up outdoor beds cubensis. It's done often but there are seasons.
