Thank you, this one was oven roasted. The reason it looks smoked is because I roast the carcass prior to making stock out of it. The stock is almost finished now. I'll strain it and then I'm adding tom yum paste for another fiery tom yum kai. Usually I'd make cream of turkey at this point but I've still got this cold thing hanging on so I'm going to try to burn it out. Thanks for asking.That a smoked turkey?

I just popped the 9 lb ham I wet cured on the BBQ to smoke.
