Get the biggest one you can afford Mojo. You can switch plates around if needed but to do a big amount at once required a LOT of pressure. The bigger the plates = less pressure.
So if you want big plates you need big pressure.
30 ton is very good and more than most use. I use 20 ton and can do an ounce easily at once.......not 2 though.
What you want is 10 x 5 or 4 plates but you need BIG pressure to over come the size of the area of the plates....you see? That would press big time amount at once. Big amounts are trickier.
 
One more thing....if your plates are big enough you can fit 2 bags in sometimes. Side by side. Just smaller than the plates themselves works best.

but 3 x hint 5 is not big..".I want to do ounces minimum at one time....any ideas????"

Hmm those are cheap although you're dealing with china for anything broken.The lowtemp 4x7 look nice with the cage and the pre press molds. I'm just thinking while I can get weed cheap, hell I could get $600/lb right now if I really wanted to. The one customer I talked to was doing 1 oz of rosin from a 1/2lb of weed.
 
So what's the best way to store rosin? Say its not consumed by high society connoisseurs like gb123 so flavor could be a little off just need the potency after storage.

I just store the same is my flowers....cool dark place in sealed containers.....Terpy rosin should budder up with in 24 hours.
