the tripa one sounds great. do they do al pastor too? on a real fire roasted spit is hard to beat. there was a real deal mexican supermercado in colo springs but it shut down. their deli/meat counter was awesome. real home cooked stuff.Don't much care for chain fast food. We have better sandwiches in the form of Vietnamese bahn mi sandwiches. Nearby there is a food truck that parks outside a Mexican carnicera. The food truck has a tow-behind smoker and sells melt in your mouth ribs and brisket. They have a smoky mac and cheese that will stop up your heart but is memorable.
The carnicera is a old fashioned meat market with a counter filled with hand cut meats catering to Hispanic tastes, attached to the meat market is a truly wonderful taqueria.
They don't speak English in the restaurant area. I don't speak much Spanish but we manage. Never felt I was treated differently even though I'm usually the only white guy in there, which says something, being this is Oregon. I'll admit to being a little intimidated the first few times in there and couldn't ask questions. They did try to warn me about the tripa (pork stomach) but I knew what I was ordering. That plate of three tacos (chorizo, lengua, tripa) made with fresh tortillas cost $7.
Within a block is a Taco Bell. White people all over that chain restaurant. Prices were about the same as the taqueria. Something for everybody.

They do make al pastor, which in their shop is a bright pink color(?). Not sure if it's achiote or food coloring but it doesn't make the best taco. Al pastor served elsewhere that I've had is a spicy hot pork and my go-to, so I was a bit disappointed in that one. Still for two bucks, it wasn't bad.

there is a carniceria (sp?) way out east in the springs that i want to try some of their prepared meats but it's a 3 hr roundtrip for me.
