My dad called and said what cheese ball? He has crs disease like I do.

Together we got out, Philly cream cheese, horseradish, Worcestershire sauce, green onions and smoked chip beef and “whatever else you want to put in there”.

He said he’d look for the recipe and call me back. He’ll forget.

In an attempt to make life and cooking easier. Here is a quick simple meal when you have limited time prone or patience.

1 3# bottom round roast.
4-5 med potatoes.
3 stalks celery.
4 carrots.
1 med onion.
8 Oz mushrooms sliced.
A clove or 2 of garic minus root tip and skin smashed.

Season roast fairly heavily with salt, black and white pepper.
Brown in a cast iron skillet with a couple Tbsps oil, lard or bacon drippings.
Or in a steel or non stick with 1/4 - 3/8" oil until very dark crust on almost high heat. Just below oil smoking.

Wash veggies and chop to your liking while browning meat.

Add to electric pressure cooker.

Mix 1 1/2C hot water with 1 1/2 Tbsp beef bullion or powdered demi glaze.
1 Tsp soy sauce.
1Tsp worchestershire sauce.
1 Tsp kitchen bouquet.
2Tbsp wine, wine vinegar or balsamic cheapo.
2 bay leaves.
garlic, onion powder, salt pepper to taste. Easy on the salt. Although lots of taters to cover your butt. LOL.
Mix thoroughly and pour over veggies.
Add meat and pour 2Tbsp melted butter over meat.
Season meat with onion, garlic powder and a bit more pepper after.
Close and cook for meats for 1 hour.

Remove and serve after a 10 minute rest.

Gravy is an easy add on. Just ask.
And the boy loves honey cornbread.

But wholesome warming northern meal for four with a minimum input.
