You want the plants really dry before you chop them, I would even remove all the fan leaves a week before chopping them, you want to get the humidity low (40-50)

Humidity lower than 40 will give you dry poor quality buds, same with temps over 25c

As you want to dry the buds as quickly as you can(hanging the hole plant) without direct airflow/ high temps or light

Low temps (above 15c) will give you better results but will increase humidity and the chance of bud rot and will take longer to dry

I defoliated already. I did some mad LST to help the lower buds finish up and a fair bit of leaves came off.
On my first grow I left all the leaves on cuz it was mainly tops. Then removed the larger ones a few days into drying
