Sex is the little hairs that come out and also these crossed leaf looking things that cross on the stem "V"? If so it had started putting out a few of those a couple days b4 flip.
When do u start the week count @ day u flip 12/12 or do I wait till I have those puff balls that are basically all pistels and then start flowering week count?

You'd start when the white pistils appear. When you switch the lights, it still takes a few weeks for the flowering hormones to build up and start the process. Not uncommon to see a few white hairs before the flip, it's preflowering and relatively common, but the plant is not in flower

I start counting flower weeks once I have nice little pom poms.
