yeah...the cotyledon leaves (those first two that pop up) are like an egg yolk, and the plant will consume them to get itself established. you don't have to start giving them any kind of food until you see those leaves begin to fade, so tap water, ro water, distilled water...makes no difference at first

They will want a temperate climate. Beyond wanting to keep them warmish none of them love a 'cold' climate (though your definition of cold may depend on where you live), you also need to contend with the amount of daylight. When plants are in their vegetative phase, they want longer days of light, once the light drops down to something like 14 hours of daylight or less, it will trigger them to flower, then you have a number of weeks until maturity.

So, you're contending with planting them during a time of year where they're not going to freeze or have frosts, have a good amount of time in 'veg' so they grow large, then have time to flower to maturity before it gets cold again.
