I'm not sure as the bravery is lacking here. Two guys at camp each cut a piece off one, did a pepper cheers and popped it in their mouth. It wasn't long before they were choking - not funny at all. Fortunately, I don't cook mine at all. I ferment raw totally submerged in brine for a couple months with whole garlic cloves. Pureed with white vinegar and bottled. Keeps forever.Hot sauce?
It's simple to make and it keeps well.
The fumes are an issue as you might expect
You pretty much have to saute the peppers outdoors, and upwind, or wear a respirator.

Can't speak on your circumstance but I find peppers taste best when drought stressed towards the end. Too much rain or watering and they become water logged or start to split. Kills the heat and flavor, especially towards the end of the season when it starts to cool off. At least in my experience.Small update. The Fresno's blow. No heat and lack taste. I'll have to find a good seed source.
