I love time lapse of plants and flowers. Sorta puts perspective into a time frame we can take in at once.I bet you can pick up a webcam cheap and some freeware software and do it. If you could run a cord for the cam. Got an old comp? toss it in the closet with a webcam.
You need to leave the computer on but you can Do time lapse with that.
I got software with my dell webcam that will do it. I can set the "photo capture interval" up to 99 hours between shots. Maybe you can find something like that.
