Why did some of my leaves do this over night?

The stems got pretty dark, twisted leaves, whitish crispy and some burnt tips, also the plant was kind of streching towards the light

Looks like she may have burnt herself on your bulb? Her leaves reaching up ("praying to Buddha") is a good sign...as long as you light isn't too close! Hope I'm correct as it's easiest to sort out.

I think the same as Sworth. AFAIK, no kind of nutrient deficiency produces that effect overnight. That stripe on the left looks like damage caused by some kind of contact. I would guess either light burns or water burns. If you get the leaves wet while the light is on, the droplets can act as lenses and focus the light rays and burn the leaves but this usually produces spots, not solid regions like your leaves show.
