Depends on which branches you've fertilized, and whether or not you have unfertilized branches you want to keep for bud (see below).

Well, in general, seeds harvested before four weeks after pollenization will have a low viability rate.
So you'll need to wait at least four weeks. Five weeks is better, and six is better yet.
Its also perfectly reasonable to harvest the seeds at the same time as you harvest the buds.
Not unless you've created them with pollen from a natural or artificially created male hermaphrodite flower.
If you've created the seeds the normal/natural way with separate male and female plants, then the seeds should be roughly 50-50% male/female.
