Just checked pH, it's back up to 7. I think the pH is what is causing the leaves to look the way they do, I just can't figure out what is causing it. I've tried pH down as well as vinegar and both it creeps back up. I'm starting to wonder if I have the beginning of Pythium.

Will do. Yes these will be from seed (just some bag seed as I would prefer to learn and possibly fail before going with "premium" seeds).

Put them in a wet paper towel, inside a plastic zip lock bag, then sit them somewhere warm (suck as on top of a computer case).
