Actually, I have heard people doing this to sex them, then switch them to veg so they can get bigger without any males, then once large enough, flower them again for real. It isn't a 100% recipe for a hermie.

From my little experience, The tops ripen about a week or so faster than the lower buds. You can harvest from top down over a few weeks if you want.
