Look at the trichomes and they'll tell you when it's ready. It looks like from the picture that most of the pistils have turned orange so I'd check soon. I wait until about 25-50% of the pistils are orange and then I start to watch the trichs. And when you chop should depend on the high you want...

That's not typical unless it's an autoflowering strain. Did you switch the light schedule at all? What is their light schedule? Do you have any pictures?
