You obviously grow better than me, but I wouldn't play too many games with my mature calexes, over little foxtails. Calexes do die eventually. You can smoke em but they're brittle, and they stink!

I'd keep everything safe, and the same as it is now, but veg with an hps. Since I see led light, I wouldn't spend $ on a new light to get them to stretch. I think your plant looks nice. Try some new sativa doms if you'd like.

Do larger plants produce bigger calyexes, or just more of them?

Definitely research the process beforehand yourself, and do things safely. I would do it if I saw orange bugs in the soil I planned on using. I use synthetic nutes tho.
