But a 33K pot is near impossible to come upon. Closest will be 35K.

That'll work perfectly.
Not sure with the larger 320, 480, & 600 sized drivers if you're supposed to use a resistor on the white dim lead. It would be 3.6K Ohm sized one since it skips between 3.4-3.6.
Very cheap and easy to buy online as well.
If I ran no dimming and the fixture im building is full cycle couldnt I just raise the light higher than normal to veg until they are strong enough to lower the lights back down
