the trick to stuff like that ( anything with a strong gamey taste that is ) is soak it in a ice chest with a few pounds of salt and a couple gallons of white vinegar pack it with ice and fill it the rest of the way with water let it soak for 15-20 hours then change the ice and water out and give it a rinseWell, I guess I'm biased. I love to still hunt, but nothing compares to dog/bear hunting with dogs. I was left right around 982 acres (about 90% entirely private, because you know you can't stop everybody from coming in) when a family member passed away a few years ago & I've ran dogs through it quite a few times, shot quite a few big deer out of there & they (deer) always come right back. Nice! I love my TC Pro Hunter (.50), but I always carry either my pistol or my model 7400 just in case.
I've shot a few of them, but never tried it. I always end up giving it away. Same with bear meat. The elderly colored folk love some damn bear meat now lol

thats the way it is where im at .... no one respects a fence they cut em half the time to drive through
brother these deer out here if you spook em too bad they go nocturnal and you wont see them till after season damn near ... last year the hogs ran them out ... i believe i have them pretty much sticking to one area now i cranked the feeders up to throw more and more often and actually am baiting a hole ... not getting pig pics anywhere but that one spot now so fingers crossed
