Ak47 leaf problems. Over feeding?

Are you topping off with pH'd water during the week? Looks like you locked out.

Yes I topped off the water about 12 hours ago with just plain ph’d water bit the stalks are really dark red in colour. Is this a major concern?

Yes I do sometimes it fluctuates between 5.6 and 5.9. Am I meant to keep it to one number?

5.8 with a drift to 6.2 keeps everything in range for uptake. If your using tap water, don't add Cal/Mag. Your plants look like they have suffered from lock out. Damaged leaves will NOT recover. Make sure your pH readings are accurate. Calibrate your pen at least 1 a month.
