Wtf is nam prik paow? Recipe please!
It's a Thai red pepper paste used for the base of stir fries and Tom Yum soups.
3 oz preserved tamarind paste dissolved in about 3/4 hot water (strain and reserve 1/2 cup)
1/3 cup dried shrimp (put in the blender and grind fine, leave in blender)

1 cup neutral oil (I use peanut), in a frying pan
1/3 cup thinly sliced garlic (fry till transparent and transfer to blender)
1 cup thinly sliced shallots (fry till transparent and transfer to blender)

Seed (retained seeds made this sauce bitter), and tear your chiles into pieces and add the amount you would like for your favor profile, and cook a bit in the oil, until soft) Here's a start:
Dozen Chile de Arbol or Cayenne peppers dried, seeds removed
1/2 Dozen New Mexico peppers dried, seeds removed

Add to blender with 1/2 cup water, and 1/4 cup Fish Sauce (I like Shrimp brand), and process until relatively smooth, add back to skillet and oil and add:
sugar to taste (about 1/3 cup for me), then cook until it gets a little darker then dump back into blender process until smooth and sieve.

For the shrimp I added a tablespoon of the oil, with some fresh chopped shallots and garlic and fried the shrimp in the oil. Top with some lime and chopped Cilantro (I was all out of Cilantro), why can't I live close enough to @Singlemalt so I can steal his cilantro and basil. Basil is really tasty too.

Damn sounds freaking delicious, nice job! love how you said @Just whipped it up" or something.

The one food type I struggle with is asian in general- I'm good with Indian, but the techniques of Asian stuff always throw me.

Anyway, fantastic. I'll be looking it up and playing with it at some point soon.

Never felt a lot like eating on acid.
Back in high school, '67-68 we used to go to Hollywood on Fri Sat nites, usually buzzed on weed to see the sights, pick up girls, etc. Part of the routine was to stop off at this particular market and get a whole turkey leg and a 28 oz coke to munch on while walking around. This one time we had dropped acid before we left Burbank, went to the market, finally got our stuff and were blazing by the time we got outside to eat. All 4 of us thought it was the grossest nastiest thing we'd ever seen and chucked them...couldn't even drink the cokes from the factory bottles as they were "contaminated"
