so I have a clu-058 3618 that I attached to a large slab heatsink and threw a cpu fan on top I'm currently pushing 125w to it and the heatsink once at equilibrium is 105 Fahrenheit - should I push more watts to it and also what is the max temp I can go while still being safe

Yes. They're measuring out to 100c or 212f

Isn't the data sheet temp measured on the cob, not the heat sink?

is that a measure of the chip or the heatsink? And that's the maximum it can be before failure right?

measure voltage as soon as you turn it on. like in first few seconds. measure it again at temperature. as long as it drops less than 4V you should be fine
