if everything is going ok with the plants and you dont anticipate any problems like with roots, (i see you got some perlite) i would just leave them in those pots.

if your not putting them into flower now, and they are outdoor plants, you will probably need to provide some bloom nutes with your waterings if you dont xplant to a larger container with more soil.. also you should check out SUPER SOIL. it only requires water from veg to bloom. just have to make sure you have enough soil for the plant to use during that time.

yup looking good, great idea going with the 5 gallon buckets, i use 7 gallon smart pots. You will need to add some nutrients as you go into flower, or you should notice some yellowing around 3-5 weeks in.

you wont have to use the nutes untill flower with that much soil, they should have plenty of stuff for 2 months of vegging. after that you will have to start adding some nutes, but watch you plants for color change. as long as they are green you are good. when the tips start to yellow, you know you can safely start a light nutrient regimen .

CA grower here too :) goodluck with your grow. I think 5 gallon is a good size. i got 6 and i probably would have been ok with 5. the problem with starting in a large planter is that ive heard the roots grow downward and not out. i started mine small and moved to 3gallon, then 6. you shoudl be fine. you will know if you need to transplant if the soil is drying out every day. you should get a couple days between waterings.

They should be fine without nutes for atleast one more month, keep an eye on the new growth for signs of low nutrients. the older leaves will burn their stored nutes an yellow naturally during vegging.
