Im a jack of all, whats the question?
I'm running my water line into my grow room today. I'm going to use a 3/4" Tee to 1/2" reducer into my room. This is all copper. Once in the room, I'm wanting to branch off my 1/2" line using PEX. I want to take the PEX around the room and pull 5 appliance valves off the PEX. I'm not sure what fittings I need to buy to accomplish this. Will be my first time working with PEX.

PEX is great stuff. You can go two routes with it. One is if the local HD has PEX (other than for radiant floor). In my area they've gone with a type of fitting that is a push fit compression. Very pricey. The other route is through a plumbing supply house which has Wirsbo which is a brand of PEX, you can rent the tool to put the collars on. Other than that if you mean you have 5 pairs of appliance valves, you'll need to run that 3/4" line all the way into your grow room.
The fitting you want is a shut-off valve to 3/8's compression (standard sink shutoffs). Then get steel braided hoses that have the fitting you need to connect directly into the appliances.
You'll want a shut-off value as you get into your grow room. This one is a brass ball-valve with a single handle not the screw type.

btw, wherever you are tapping your line, start your PEX. Copper is a waste of time.

I think I understand what you're getting. I have 2 stickes of half inch left from when I replumbed the whole house. Figured I could get away with using that. But I do think you're right, if I'm going to have that many valves, 3/4" would be better.
Not really sure how I really want to do it. All I truly need is a hose bib once in the room. I had been thinking about putting a faucet on each of my res tanks.

Pex is faster easier but copper last longer, I personally don't like the stuff, seen too many floods with it. Not saying ya have rodents but for some reason they love chewing on that stuff also.
Sounds like you have a good grasp on what you are doing anyway. I mean if ya can re-pipe your house, this should be easy.
Oh and always remember if ya solder near pex make sure you are at least 18 inches away from the adapter fitting.
I don't know if they have em out where you are but Ferguson, will have everything you need, and last time I checked Lowe's has a decent supply of pex stuff also.

Just got back from lowes picking up supplies. I looked more at the PEX fittings and such especially the ones that go from copper to pex. It does look super easy. My dream idea is to have my water line into the room that will have a water faucet and hose for my work station. And then tee off of that to go around the room and have little shower heads or single faucets for each res tank. I wanted to utilize what I had here. I have only worked with copper. Not so much PEX, so wasn't sure if it would be more cost effective to do this or not. Turns out after looking at lowes, to do what I truly want either route with pex or copper it's going to be around a 300-1000 dollar upgrade. So I scratched that idea. I'm just going to have the line come into the room by the sink area. I'll just have a hose bib for my faucet for the vanity for the work area of the room and attach one of those smaller spaghetti type garden hose that can stretch to tank to tank as needed.
