Are there any seeds that cant be started in jiffy pellets and pots?

Like which seeds work best sown into a bigger or final pot as opposed to started in pots/pellets and vice versa.

it is said that autos should be started in there final pots from start to finnish, this is because the plant has such a short life ,thay anything that hinders a plants root system growth, like repotting stunts the growth of the plant.
photos are best started in 6" pots and then into a 1 gallon pot for example and then to its final plant pot afterwards

Figuring you’re new, you probably want to start all your seeds in a small pot/cup. That way overwatering is less of an issue.

You're talking about vegetables right?

If so you can pretty much start anything in the pellets although some things like lettuce and other greens are better off sown directly or in those 72 cell nursery trays or something similar.

And some plants don't always transplant well. I would sow corn, squash, and cucumbers directly in the final container. Some people do start them in small pots or those pellets but I've never found it to be beneficial myself. When I have done it they always took a while to get growing good and would be passed up by seeds I directly sowed much later. But that could be due to where I'm at and putting things out too early and stunting the plants from cold temps.
