Bear’s Kitchen: a T&T foodie thread

so your favorite bbq sauce on pulled pork is...?

i'm eastern NC: spicy vinegar and tomato sauce. very thin.
Because I like you I'll share it.

1 lb butter (salted or unsalted)
1 C cider vinegar
1 C catsup
1 5-6 oz jar prepared horseradish
Juice of 6 limes
1 tsp salt
1 TBL Worcestershire sauce
1 TSP or so hot pepper sauce (Crystal, Louisiana or Tabasco are what I tend to use)

Allow it to simmer to come together and it's heaven on pork.

Coleslaw to top the pulled pork on a bun.

Might as well give you the pork rub too. Then you have the entire set up
1 C brown sugar
1/2 kosher salt (Diamond Crystal)
4 TBL smoked paprika
2 TBL coarse ground black pepper
1/2 TBL cumin
1/2 TBL onion powder
1/2 TBL garlic powder
1 TSP Cayenne
1 TSP Chipotle powder

No, I never have and it sounds good. I'll have to give it a try. My coleslaw isn't really measured so I hate to give it but it's about as simple as it gets.

A good amount of Best Food (Helmans) Mayo
Cider vinegar and sugar to taste

Salt and pepper the coleslaw when you serve it.

Saturday took me past Tehachapi. On the return leg I checked out a place in a grungy warehouse ghetto behind the Home Depot.
It was called Local Craft Beer. It looks like a shoestring operation. They brew their own beers but do not serve food. The young couple who run it, he was on the phone while she gave me a coupla hi-abv samples (the Double Snobs was quite tasty) before I selected a pint of the hoppy lager to go with the mulita cabeza I had in the car. The back of her jacket said ASSHOLES LIVE FOREVER.

Then I went home and stabbed myself through a fingernail. Who does that!?

You can't cook it though, the horse dies. It's an enzyme reaction (peroxidase) that simulates heat unlike capsaicin which is stable.

They had chuck roll for $3.59 lb at Chef's Store so I grabbed one. I grabbed a pork loin the other day as well and cut that into chops with the rest ground and seasoned for breakfast sausage. I see biscuits and gravy for breakfast in the near future.

It was a 30 pounder and I ended up with some nice sized Denver steaks along with a few chuck eye steaks, roasts, stir fry/stroganoff meat, some for jerky, and 8-10 lbs of ground beef. Had these for dinner the other night. Lots of marbling, tender, and full of flavor.

Well I learned a couple things just now.
Curious enjoys rubbing butt and Darkweb likes their butt rubbed.
Somebody has good taste in cheese.
Somebody else put holes in their nails.
Cannabineer has some good taste.

Chunky steelhead cake with a chili mayo and spicy broccolini.
Yes, I cheated eating breadcrumbs this month. Sue me.
No booze, day 22.
