Can early harvested seeds effect the whole plants growth?

Ok so I planted 3 seeds I made myself about 5 days ago, it turns out they were harvested about 2 wks early
the plants all sprouted with only cotyledons and no leaves, and they've been like that for about 5 days and barely grew at all, now they are just starting to grow tiny microscopic sized leaves...im thinking this i sbecause they were harvested a bit early unless its because the soils ph is low or something

What kind of lights are you using? what kind of soil? It could just be the genetics of the plant itself and just be a slow grower..i had the ame problem myself and was just about to dump it when i told myself to just give her time n she turned out to be one of my biggest ones!! Just be patient my friend..lol
