There’s your problem however it came to be. That’s expert level. Suggest dilute until you reach 850. Wait a bit and check again. pH as well. What do the roots look like?
So let's get back to the original question. I'm going to change her water tomorrow. Should I go with late veg nutes or early bloom nutes? What's should I be aiming the ec to be at when I do?
 
That's all she's ever had. Could it be because I haven't been topping her off between water changings so the roots are sinking deeper to reach the water? We also had a calcium deficiency in the beginning by using distilled water

You need to check those 3 things daily. If something is not right check even more frequently. Solution level, pH and EC/PPM.

Should I keep the solution level around an inch or two from the net pot at ALL TIMES? and if that is the case, do I top off with fresh water or nutrients water? Won't this affect the ppm between changings?

They will use water without taking up nutrients resulting in a high EC and low solution level. Net basket clearing the solution so nothing splashes it up. Or they’ll eat instead of drink and lower the EC without affecting volume much.

Sorry, I'm still getting used to using the tds meter. So I should top her off daily with fresh water? But note that that will result in the ec being higher but ppm lower. Am I getting this right?
